(1) 10 lb Prime Rib Roast
5 garlic cloves, minced
2 tbs olive oil
3 tsp of ground black pepper
3 tsp of salt
3 tsp of allspice
3 tbs of dried chives
2 whole white onions, cut in half
5 peeled potatoes, cut in half
25 baby carrots

1. Place the prime rib in a large roasting pan, making sure to keep the fatty side up.
2. Place the vegetables around the prime rib.
3. Mix the oil and seasoning in a bowl, then using basting brush, spread the mixture on the side that’s facing up of the prime rib, and on the vegetables.
4. Let the prime rib and vegetables sit out and soak in the seasonings for about 1 hour.
5. Preheat oven to 475.
6. Cover the pan with aluminum foil, and place in oven for 30 minutes.
7. Reduce oven temperature to 320, remove foil, and let cook for an additional 60-70 minutes, or longer if you would like it cooked more than medium rare.
8. Carefully remove from oven, cut, and enjoy!
